Apartments rental in Cuenca

My wife and I are arriving to Quito in a few days and are planning to go to Cuenca for a couple of months or more. So we are thinking to rent an apartment and travel from there to several places, like Salinas, Guayaquil, Vilcabamba, etc.
Do you think it would be difficult to find an apartment for such a short period of time? Will I have to sign a contract?
Does anyone know of any places we could rent?
