We did a whirlwind tour of Ecuador back in May for the same amount of time as you. With some luck and a posting on some site (it could have been this one but I do not recall), we found an absolutely wonderful individual who took us from Quito to Otavalo and Cotacachi, down to Cuenca, over thru Guayaquil to Salinas, up to Canoa and then back up to Cotacachi before departing out of Quito. It appeared to be a whirlwind trip but each day was relaxing and very informative.
